Title: Lime-Melon Chutney

Yield: 1 Servings

1 1/2cSugar
1 1/2cWhite vinegar
2tbChopped preserved ginger
4lgCloves garlic, chopped
2tsMustard seeds
1tsSalt
1/4tsCrushed red chile pepper
8cCantaloupe, peeled and cubed
  (about 3-4 melons)
1 1/2cGolden raisins
1/2cFresh lime juice, (about 4 limes)
1/2cChopped walnuts
1tbGrated lime peel

Mix first 7 ingredients in a large heavy saucepan. Boil gently for 5 minutes. Add the next 3 ingredients and cook over medium heat, stirring often, about about 1 hour, until mixture is consistency of jam. Remove from heat and stir in last 2 ingredients. Ladle into hot, sterlized half-pint jars and seal. Process in a boiling water bath for 15 minutes. Cool and store in the refrigerator after opening. Makes about 5 jars.
